Located on a steep south / southwest facing slope, it captures the sun's rays until sunset. Before being used as a vineyard, the area was pasture for the wild breeding of Limousine cattle, which enriched the calcareous-clayey soil with natural organic material. The espalier rows, cultivated with the Guyot method, are set up in such a way as to favor a limited production of grapes with respect to each single plant.


Therefore the clusters can count on a more extensive root system which gives the grapes a great variety of flavors and aromas. The soil is covered with grass in order to avoid erosion and make the organoleptic characteristics of the grapes optimal; grassing is mechanically controlled without the use of herbicides. Fertilization is entrusted to the manure produced on the farm. The vines are treated with cover products authorized in organic farming, rather than with systemic treatments. To ensure the highest quality and avoid unwanted fermentation, the harvest is done by hand in the coolest hours of the day, with harvesting in small ventilated crates; the clusters, transported to the cellar with refrigerated trucks, are then delicately pressed to intervene as little as possible in the clarification phase.
